Things making me happier today, Wednesday 24 December (day 6):

1. Making fudge was fun, even if it failed
2. A Christmas Story, the only Christmas movie I actually like
3. Rain, even if brief

i forget it marshmallow fluff is easy to find out there, but the "never-fail fudge" recipe on the back of the jar is, in fact, easy and hard to fuck up, and makes a pretty good fudge. particularly if you use good chocolate.

Oh, I didn't have a lot of the right ingredients so I was playing all sorts of substitution games - cocoa powder plus vegetable oil for baking chocolate, milk for half-and-half, and molasses for corn syrup. The surprise isn't that it failed, the surprise would've been if it had worked at all.

Wow. With that level of substitution, I'm kind of surprised it didn't end up exploding or spontaneously catching fire or something ;)

Well, who's to say it won't? ^_^

I'm pretty sure the problem was too much vegetable oil. I think a bit less of that and it would've set up. I got the ratio of cocoa powder:veg oil for 1oz baking chocolate and tripled it for the three the recipe wanted. I think that if I interpret the oil portion as a declining addition (add less per weight as you increase weight substituted) that it might work.
