Easy grilled chicken
Aug. 1st, 2002 12:41 amI heard a professional chef mention this easy recipie for grilled chicken breasts on NPR and tried it. It's pretty good.
Mix:
1/4 cup ground paprika
2T kosher salt (I used sea salt)
2T ground black pepper
1/4 cup coriander
1/2 cup cumin
Coat the chicken with the mix right before the chicken goes on the grill; cook as usual. The amounts they gave is more than enough for eight average sized whole chicken breasts, but you can store unused mix for a long time. (I cut the numbers in half for three and had leftover, which I'm saving for later.)
I think it's kind of "what shake and bake is supposed to be."
