It was about two hours from start to table, but I'm not the fastest with a chef's knife. I'm sure it'd be quicker the second time, but I don't know how much. You need half an hour simmering on stovetop, 10 minutes before that, and then 25 minutes or so in the oven, so it's going to be over an hour of prep no matter what. (Fortunately the oven and simmer time can be used for other things.) But worth it.
